Guest Chef at Kota Kai – we borrowed Dom Chapman from The Beehive

When we host a party at Kota Kai we go all out.  And the Great British Menu evening we had in Kota Kai last Thursday was a definitely a party!

South West representative Dom Chapman joined us for the second time for a guest chef evening and the most incredible feast was delivered up to an eager audience.

Guests were welcomed with a delightful gin based cocktail using the wonderfully distinct, and definitely local, Curio gin.

When all guests had arrived and were seated, a nervously excited pair of chefs took to the floor to introduce the evening and the planned menu.  Spending the majority of their time in their kitchens prepping, slicing and sautéing these two usually save the public speaking to others but they charmed the crowd naturally, eliciting a laugh or two.

The menu was varied and delightful.  Just look at the offerings!

The Amuse-Bouche certainly did as it was meant to. Many a mouth was amused by these as the tempting teaser to the rest of the menu.

Dominic then served up a wonderful Mackerel dish before stopping for a laugh with Jude.

Next came the raved about Singapore style soft shell tempura crab Bao Buns from Jude.

Dom then dished up his warm salad of wood pigeon with a fine red wine.

The Hunter Pie from Jude followed after a quick team shot in the kitchen.  And the bar team topped up the classes for the next dish.

A sumptuous dessert of caramelised apple terrine with Calvados sauce followed with a sweet dessert wine to accompany it.

Nearing the final course, the guests took their time over the desserts, finding that much rumoured second ‘pudding’ tummy to fit in the wonderful trifle created by Dom.

All that remained to follow was the petit fours and coffee to end the evening before Dom heroically jumped into his car and drove back up country to White Waltham to cover the breakfast shift in The Beehive.  Now that’s dedication.  Thanks Dom.  You’re a superstar!
